Expand coverage to Western kitchen knives

Currently the site index Japanese kitchen knives exclusively, which might not fit for everyone. Considering expanding coverage to Western brands like Mercer (which I also own two of them), and other reputable brands like Wüsthof, Zwilling J. A. Henckels, etc.
